<p>chicken chunks<br />

<p>Marinate the chicken chunks by applying a mixture of red chilli powder,malvani masala, half of the lemon juice and salt to them and keep aside for about an hour. Whisk the yoghurt in a bowl and combine the rest of the ingredients. Mix well. Rub this marinade well into the chicken chunks and refrigerate for at least few hours.</p>
<p>Grill the chicken for about 12-15 minutes or till the chicken is almost done.</p>
<p>Serve hot with: Green pudina(Mint) Chutney</p>

<p>Method to prepare:</p>
<p>Clean and soak Basmati for 10 to 15 mins.</p>
<p>Clean and chop chicken to required size. Mix curd, chilli pw, coriander turmeric, Mint and coriander leaves to the chicken. Let it marinate for 10 to 15 mins.</p>
<p>Meanwhile chop Onions as julienne, chillies. Heat oil and butter. Add all the whole spices. Then sauté in Onions till they are brown in colour, add ginger garlic paste. Fry well.</p>
<p>Then add the chicken marinade. Cook on high flame for 5 mins and simmer till the oil comes out.</p>
<p>Add the rice, salt, 3 cups of water and pressure cook for 2 whistle.</p>
<p>Since this is quite spicy, Onion Raita would be nice but I prepare Gravy which turned out to be quite heavy.</p>
<p>Adjust the spiciness by reducing the chilli powder and green chillies.</p>

<p>For orange custard</p>

<p>Heat milk but take care that it does not become too hot. Break eggs into a bowl. Add sugar and whisk together lightly.<br />
Take orange juice in a pan and boil till it reduces to half its volume. Add orange marmalade mix well and set aside to cool.<br />
To make caramel take sugar in a heavy bottom pan and cook till it melts and turns golden brown. Remove from heat immediately to avoid burning.<br />
Pour this caramel into a custard mold and keep warm.<br />
Mix the orange juice mixture with the eggs. Add warm milk to it and mix.<br />
Pour the mixture into the caramelized mould.<br />
Cover the bowl with butter paper. Heat some water in a pressure cooker and place this mould in it. Cover the cooker with a lid. Do not place the whistle.<br />
Steam for forty-five minutes. Cool and serve.</p>
<p>Chef’s Tip: It can be served hot too.</p>

Ingredients:

 1 small bunch fresh mint &#8211; picked and washed
 2 medium onions &#8211; chopped coarsely
 10-12 green chillies &#8211; stemmed
 1 green mango (optional) &#8211; skinned, seeded and chopped or 1 tbsp. Pomegranate seeds
 1 tsp cumin seeds
 1 tsp salt

Method:

 Pound together all the ingredients till coarsely mashed. Serve fresh.

Ingredients:

 15 gm Cinnamon
 10 gm Cardamom
 10 gm Cloves
 50 gm Cummin Seed
 10 gm bay leaf
 5 gm Pepper Black

Method:

 Roast cumminseed till it becomes brown. Heat all other ingredients slightly so that they do not have any moisture.
 Grind together all the ingredients to a fine powder.

Makes 100 gm
